Ray's Recipe Corner

One of my husbands new retirement hobbies is cooking.  We'll try to share some of our favorites regularly.   Enjoy!

Bruschetta al Pomodoro (Ray’s)

Ingredients

8 seeded, chopped roma tomatoes

5 leaves chopped fresh basil

2 cloves minced garlic

1 pinch dried oregano

1 dash crushed red pepper

1 pinch salt

1 jar garlic salt

1 pinch ground black pepper

1 jar olive oil

1 loaf Forest Rye Bread

Instructions

1.      Preheat the grill

2.     In a mixing bowl, combine the tomatoes, basil, garlic, oregano, red pepper, salt, pepper.  Allow the mixture to sit for 10 minutes.

3.     Slice the bread.  Arrange the slices in a single layer on the grill.  Using a brush coat the first side with olive oil and sprinkle with garlic salt.  Grill the bread until the bottom starts to brown.  Turn the bread over and coat with just olive oil.

4.     Spread the tomato mixture on the slices.

Excerpts from Quality of Life

Message to My Readers

It is my pleasure to introduce myself and to share a little bit about my life with you. I am a wife, mother, grandmother, and daughter. I am also an entrepreneur, a conference host, a motivational speaker, a writer, and a mentor.

After thirty years in Corporate America I retired and after enjoying a prosperous, meaningful career life that gave me the opportunity to touch the lives of hundreds of people and to help them discover their own potential and to realize their own future. My husband and I spent a number of years commuting back and forth from our home in South Bend, Indiana, to Milan, Italy, and to Athens, Greece, where I enjoyed the opportunity to work with some wonderful people and to experience new cultures and new business opportunities.

My personal mission includes motivation, inspiration, and a deep desire to express myself in ways that help others discover themselves. I want to motivate, to inspire, and to guide other people through my writing, my seminars, and through my individual coaching to help them discover themselves and to strive to be the best they can be.

I want to create and to maintain a balance in life that supports a successful retirement that includes family, leisure, self-expression, and personal contribution. I want to make a difference in the lives of other people.

Through the launching of my first book, Quality of Life: The Five Stages of Retirement Success, I want to help you to discover your best self. Through the depth of my own experiences and the experiences of others who have shared so generously of themselves, I invite you to walk with me from preretirement planning, to the first year of discovery, to moving forward, to living our lives to the fullest, to leaving a legacy.

I sincerely hope you will enjoy reading Quality Of Life and that in some small way you will be inspired as you join me in our journey into our future. Please know that I have thought of you often as I wrote this book, and I have even imagined who you are and whom you will become. Just as the experience of writing this book has inspired me, I hope to inspire you. Together we can explore and discover, we can choose to wander off life’s everyday path, and each of us can become the person God intended us to be.
